Giniling na Baboy (Ground Pork)

Giniling na Baboy is one of my favorite recipe because of its tasty flavor and a lot of ingredients mixed in it. In most local eatery, you can find this viand as a staple. I remembered during College days, they even sell half order of Giniling with rice for about 25 Pesos. Affordable enough.

The ingredients of Giniling na Baboy are as follows:

1/2 Kg. Ground Pork
1 whole onion, minced
6 cloves garlic, minced
4 pcs. ripe tomatoes, diced
1 pc medium sized carrot, sliced thinly
2 pcs. medium sized potato, cubed
1 can cooked green peas
1 pack (1/4 cup) raisins
5-6 pcs. quail eggs, boiled
1 pc red bell pepper cut into strips
1 pc. green bell pepper cut into strips
salt and pepper to taste
cooking oil

In a skillet, Saute Garlic, Onions, Tomatoes. You can mash the tomatoes to bring out the juice and flavor. Add the pork, season with salt and pepper to taste and stir fry for about 2 minutes. Cover the pan so the pork will cook quickly. Add water and bring to a boil. Lower the heat and continue to simmer until the pork is tender. You can add more water to have a bit of soup. I personally like my Giniling to be a bit soupy while some people prefer it to be dry.

Add the potatoes, carrots, green peas and raisins. Cook until the vegetable are tender but do not overcook. Add the bell peppers until tender. Remove from fire. Add the quail eggs before serving.

You may notice from my picture missing items were¬† raisins, bell pepper and quail eggs. I purposely added it in my recipe because the complete Giniling na Baboy should have all these items in it. However, my friendly neighborhood grocery don’t sell these items.

After mixing all the ingredients together, it seemed my small dish becomes big and might be good for 3 days consumption since I’m the only one to eat. LOL.
