We call it Bola-Bola in the Philippines, bola being the local term for ball which is the shape of the main ingredient for this dish. There are 2 parts that you need to do to cook this dish. 1.) Prepare the meatballs 2.) Prepare the Sweet and Sour Sauce.
1.) Preparing the meatballs:
1/2 Kilo Ground Lean Pork
1 big onion, chopped finely (or 1/cup shallots finely chopped)
1 small carrots, finely chopped
6 stalks of spring onion, finely chopped
2-3 tbsp. flour
salt and pepper to taste
mix all ingredients by hand. to taste if the pork meatballs suit your taste, scoop a small portion and fry in oil. once cooked, you may taste. add salt and pepper if desired. if the taste is perfect, you may continue scooping the pork mixture and roll into small balls. before frying and while you are doing the you may place it in a dry plate dredged thinly with flour to avoid sticking. continue shaping the meatballs until all the mix are done.
deep fry in vegetable oil. drain excess oil. set aside.
2.) Preparing the sweet and sour sauce:
1/3 cup white vinegar
4 tablespoons brown sugar
2 tablespoon ketchup
1 tablespoon soy sauce
1 medium sized carrots, sliced
1 red bell pepper sliced into strips
1 medium sized onion, sliced
2 tablespoons cornstarch mixed with 4 tablespoons water
mix all the ingredients together except for the last ingredient. bring to a boil. when the mixture is already boiling and the vegetable tender, add the cornstarch+water mixture to thicken the sauce. remove from fire.
Serve the meatballs and sweet and sour sauce in a serving dish and combine with freshly cooked rice.
